Excellent resource submitted by ckuus on June 25, 2014, 9:23am This cookbook, authored by an editor of Cook's Illustrated (read: he knows his stuff!) is a comprehensive compilation of delicious vegetarian dishes influenced by a variety of different cuisines. Bishop know you don't always have three hours to spend crafting dinner, so the large majority of dishes are quickly prepared and always flavorful. I've been cooking vegetarian for years, but I still turn to this cookbook when I need inspiration or a new way to prepare garbanzo beans or butternut squash.
