3 eggs, beaten
1 tsp. salt
1 c. oil
1 1/4 tsp. baking powder
2 1/2 c. sugar
1 tsp. baking soda
2 c. zucchini, grated but not peeled
3 tsp. cinnamon
1 c. nuts, chopped (optional)
1 tsp. vanilla, or 2 tsp. lemon peel, grated
3 c. flour

Mix first five ingredients together. Then add rest of ingredients. Grease and flour 2 loaf pans or 1 bundt pan. Bake 60-70 minutes at 350 degrees.
