WELSH RAREBIT

One-fourth lb. of cheese, 1/4 cup of milk, 1 teaspoon of mustard, 1/2 teaspoonful of salt, 1 egg, 1 teaspoonful of butter, a few grains of cayenne, 1 small tablespoonful of chopped onion, 4 slices of toast.
Break the cheese in small pieces, or grate it and put it with the onion in a double boiler. Add the milk. Mix the mustard, salt and pepper and add to the beaten egg. When the cheese is melted add the butter and other ingredients and cook 2 or 3 minutes until it thickens a little, then pour over the hot toast and serve.

(Frequently tested, and excellent). Put 1 tablespoonful butter in chafing dish. When melted add 1 cup fresh milk and 1/2 cup fine bread crumbs, 2 cups of grated cheese, a salt spoonful of dry mustard, a little cayenne. Stir constantly, and add just before serving 2 eggs beaten light.

One-half lb. cheese, 1/2 cup cream, 1 tablespoon melted butter and dash cayenne pepper. Cut cheese and beat all together, stirring till cheese is melted. Lastly, stir in 1 well beaten egg. Serve on toast, wafers or shredded wheat biscuit. Use chafing dish.

Nut Meat Loaf

One and a half cups assorted nut meats, chopped; 2 cups hard bread crumbs, put through coarse grinder; 3 eggs, 1 1/2 cups milk, pinch of soda, 1 teaspoonful butter, 1 teaspoonful sugar, 1/2 teaspoonful salt, 10 gratings of nutmeg, bread crumbs on top. Bake in slow oven. Serve with tomato sauce. Use Campbell's tomato soup or cook in 1 pint of tomatoes; 4 whole cloves, small piece of onion. Drain; add 1 tablespoonful butter, flour and salt or paprika to taste.

Graham Bread

2/3 cup sugar, butter size of egg (creamed together), 1 egg, 2 cups buttermilk, 1 teaspoonful soda, added to buttermilk; 1 teaspoonful salt, 3 cups graham flour. Nuts or raisins may be added.

1/2 cup sugar
1 egg,
1 teaspoonful salt
1 cup milk
2 1/2 cups flour
3 teaspoonfuls Royal baking powder
1 cup walnut meats

1. Mix all together and let stand 15 minutes before baking.
2. Bake 45 minutes.

Milk Toast

Toast bread nice and brown. Make a sauce of 1 tablespoonful butter, or butter substitute, 1 tablespoonful flour, 1 cup of milk, salt and pepper. Cook until of creamy consistency, and pour over hot toast.

PUFF PASTE

One lb. flour
1 lb. butter
1/2 pt. ice water

Wash all the salt out of the butter in ice water; mix flour and water together, roll out and lay on all the butter; then fold three-fold and roll again, folding three-fold for 8 times.

SUNSHINE SPONGE CAKE

Whites of 7 eggs
yolks of 5
1 cup of fine granulated sugar
1 scant cup of flour
measured after sifting 5 times
1/4 teaspoonful of cream of tartar
1 teaspoonful of orange extract

Beat yolks till thick and set aside. Now add a pinch of salt and the cream of tartar to the whites and beat till very stiff; add sugar, beat thoroughly, then add flavoring and beaten yolks; beat lightly and carefully, stir in the flour. Bake in tube pan in moderate oven 40 to 50 minutes. Invert the pan to cool.

CREAM SAUCE

4 Tablespoon butter. 5 tablespoon flour. 1 qt milk. Stir butter & flour to a Cream and add to the milk when boiling use double boiler. Pepper & salt to taste.
