Wipe the sausages dry. Dip them in beaten egg and bread-crumbs. Put them in the frying-basket and plunge into boiling fat. Cook ten minutes. Serve with a garnish of toasted bread and parsley.

To one egg thoroughly beaten, put one cup of sweet milk and a little salt. Slice light bread, and dip into the mixture, allowing each slice to absorb some of the milk; then brown on a hot buttered griddle; spread with butter, and serve hot.

Mince some cold beef, a little fat with the lean, put to it as much cold boiled potatoes chopped as you like, (the quantity as of meat or twice as much,) season with pepper and salt; add as much gravy or hot water as will make it moist, then put in a stew-pan over a gentle fire; dredge in a small quantity of wheat flour; stir it about with a spoon, cover the stew-pan, and let it simmer for half an hour---take care that it does not burn. Dish it with or without a slice of toast under it, for breakfast. This hash may be made without potatoes; if water is used instead of gravy, a bit of butter may be added, more or less, according to the proportion of fat with the lean meat.

Take your bones, and stew them in a little water with an onion, some salt and pepper, and, if you like, a little savory herbs; when the goodness is all out of the bones, and it tastes nice, thicken the gravy with a teaspoonful of corn starch, and if it is not very strong put in a bit of butter, then place your stew pan on the hot hearth, and put in your slices of meat. Warm but not boil. Serve with toasted bread.

One cup bread crumbs, 1/2 cup grated cheese, 1 egg, 1 cup milk. Let stand 20 minutes, then bake.

One teaspoonful butter
3 eggs
3 teaspoonfuls cold water
6 teaspoonfuls or 1/2 cup chipped cheese.

Put butter in dish and let cook until frothy; partly beat 3 eggs; add cold water and beat more. Put in dish and cook; shake until it looks creamy; add salt, cayenne pepper and cheese, and roll. Can use chipped ham, green peas, jelly or preserves.

2/3 Cup Flour
2/3 Cup milk
1/2 tsp. baking powder
4 eggs
2 Tbsp. butter

Preheat oven to 400 degrees. Mix all ingredients except butter. In 12" rounded side skillet with metal handle heat butter until hot and bubbly. Pour in batter. Bake 15-18 minutes until puffy and golden. Cut in wedges and serve with syrup.

Save from dinner a soup plate of mashed potatoes, add to it half a saltspoonful of pepper, the same of nutmeg, a little salt and the yolk of an egg; form into small cakes, put in a buttered baking pan, brush the top with the white of an egg and brown in a quick oven.

Take a part of your dough that has been prepared with shortening for raised biscuits, into this mix a handful of sugar, then roll out to the thickness of about one-half inch, place in a dripping pan and let stand in a warm place till light. When light cover the top with melted butter, and sprinkle over with sugar and cinnamon. Bake and cut in strips. This is a breakfast bread much used by Germans.

Mennonite Toast

Beat three eggs well, add a pint of sweet milk, salt. Cut slices an inch thick from a loaf of bread; remove the crust, dip the slices into the egg and milk, fry like doughnuts, in very hot lard, until brown; butter and sprinkle with powdered sugar. Serve hot.
