LOAF CAKE

One pound of butter beaten to a cream, two pounds of sugar rolled fine, three pounds of sifted wheat flour, six well beaten eggs, three teaspoonfuls of powdered saleratus [bicarbonate of soda], dissolved in a little hot water, one tablespoonful of ground cinnamon, and half a nutmeg grated; add one pound of currants, well washed and dried, one pound of raisins stoned and cut in two; work the whole well together, divide it in three loaves, put them in buttered basins, and bake one hour in a moderate oven.

MACAROONS

One-half pound of sweet almonds, one-half pound of sifted loaf sugar, the whites of three eggs, wafer-paper. Blanch, skin, and dry the almonds, and pound them well with a little orange-flower water or plain water; then add to them the sifted sugar and the whites of the eggs, which should be beaten to a stiff froth, and mix all the ingredients well to drop it at equal distances from a biscuit-syringe on to sheets of wafer-paper; put a strip of almond on the top of each; strew some sugar over, and bake the macaroons in rather a slow oven, of a light brown color. When hard and set, they are done, and must not be allowed to get very brown, as that would spoil their appearance. If the cakes, when baked, appear heavy, add a little more white of egg, but let this always be well whisked before it is added to the other ingredients. We have given a recipe for making these cakes, but we think it almost or quite as economical to purchase such articles as these at a good confectioner's.

WHITE LADY-CAKE

Beat the whites of eight eggs to a high froth, add gradually a pound of white sugar finely ground, beat quarter of a pound of butter to a cream, add a teacup of sweet milk with a small teaspoonful of powdered volatile salts or saleratus [bicarbonate of soda] dissolved in it; put the eggs to butter and milk, add as much sifted wheat flour as will make it as thick as pound cake mixture, and a teaspoon of orange-flower water or lemon extract, then add a quarter of a pound of shelled almonds, blanched and beaten to a paste with a little white of egg; beat the whole together until light and white; line a square tin pan with buttered paper, put in the mixture an inch deep, and bake half an hour in a quick oven. When done take it from the pan; when cold take the paper off, turn it upside down on the bottom of the pan and ice the side which was down; when the icing is nearly hard mark it in slices the width of a finger, and two inches and a half long.

Snow Balls (White)

One cup sugar, 6 tablespoonfuls melted butter, 2 eggs, 1 cup sweet milk, 2 teaspoonfuls cream of tartar, 1 teaspoonful soda, a very little nutmeg, 1 teaspoonful salt. Place sugar in mixing bowl, add butter, beaten eggs and milk. Sift dry ingredients, using about 3 1/2 cups flour. Add to wet ingredients. Mix quite soft. Roll out. Cut with a small round cutter, your tea canister top may be right size, and fry in deep fat. Roll each cake when cool in xxxx sugar.

Chocolate Doughnuts

Two eggs, 1 tablespoonful melted butter, 1 cup sweet milk, 1 cup sugar, 1/2 teaspoonful salt, 2 tablespoonfuls melted chocolate, 1 teaspoonful vanilla, 2 teaspoonfuls Royal baking powder, 3 cups flour, 1 cup sugar. Put sugar in mixing bowl, add beaten eggs, butter, chocolate and milk. Sift in dry ingredients, add vanilla. Roll out and fry in deep fat.

Fried Cakes

One cup sugar, 1 egg, 1 cup sour milk, 1 cup mashed potatoes, 3 tablespoonfuls melted lard, 1 teaspoonful soda, pinch of ginger, pinch of salt, nutmeg, 2 small teaspoonfuls Royal baking powder.
Method: If pinch of ginger is put in lard for frying they will not soak up the lard. Mix soft.

Doughnuts

Two cups sugar, 1-3 cup butter, 2 cups sweet milk, 3 eggs, 1 heaping teaspoonful Royal baking powder to each pint flour. Add flour until the right consistency to roll.

Chocolate Nougat Cake

One cup sugar, 1 1/2 cups butter, 1 cup sour milk, 1 1/2 cups flour, 1 level teaspoonful soda, 2 eggs, 1 cup raisins, 1 cup nut meats, 2 squares chocolate, 1 teaspoonful vanilla.
Method: Cream butter and sugar, add eggs, 1 at a time, and beat all together; add melted chocolate, then milk, soda put in milk. Last add flour, then raisins, nuts and vanilla. Ice with boiled icing. 1 egg (white), 1 cup sugar, water.

Hot Water Ginger Bread

One cup molasses, 1/2 cup sugar, 1/2 cup butter or lard, 1 egg, 1 cup boiling water, 2 teaspoonfuls soda, 1 teaspoonful ginger, 2 teaspoonfuls cinnamon, 2 1/2 cups flour.
Method: 1. Mix dry things except sugar. 2. Mix molasses, sugar, butter, melted. 3. Add the egg to lard mixture and beat. 4. Add wet to the dry mixture. 5. Add hot water and beat well. 6. Bake 25 minutes in hot oven.

Ginger Cake

One cup sour milk, 1 cup sugar, 1 cup molasses, 2 eggs, butter size of walnut, 1 1/2 teaspoonfuls ginger, 1 1/2 teaspoonfuls cinnamon, 2 scant cups flour, 2 teaspoonfuls soda, dissolved in 1/2 cup hot water.
