1/2 lb. medium noodles - cooked
1/4 C. butter or oleo
1/4 lb. each of cream, cottage and american cheese
3 eggs - beaten to just mix thoroughly
1 C. milk
1/3 C. sugar (optional)
1 C. sour cream
salt to taste

Mix together and place in a two quart buttered casserole.
Sprinkle cornflakes on top and bake 350 degree for 40 minutes-
one hour.

Lukshen And Cheese Kugel I image

1/2 lb. broad noodles
1/8 C. sugar
1/2 lb. cottage cheese
1/8 lb. soft butter
1/2 pt. sour cream
Pinch of salt
3 eggs

Boil noodles. Mix with other ingredients. Pour into greased baking dish and bake 15 minutes at 400°, then 1 hr. at 350°. Cut into squares. Serves about 6, as a side dish.

Fayga's Noodle Ring

1/2 lb. broad noodles - cooked and drained
Stir 3 T. soft oleo through hot noodles

Mix well: 1 C. orange juice
1/2 t. grated orange rind
1/2 C. sugar
1/4 t. cinnamon
1/2 t. salt

Add to noodles and set aside for 1 1/2 hours at least.

1 apple - grated
1/4 C. raisins
2 eggs - well beaten
Add to noodles

Topping:
1/4 C. brown sugar
1/2 C. ground nuts
1/8 t. cinnamon

Pour into 2 quart casserole, greased. Add topping. Dot with butter. Bake 350 degrees for 1 hour.

Chicken Casseroles

One cup of rice washed several times and boiled till very tender in a lot of water, 1/4 cup of milk, 1/2 teaspoonful of salt, 1/8 teaspoonful of pepper. Drain the rice, season it with a little butter, pepper and salt and line greased muffin tins with it. Fill with creamed chicken, cover over with rice, put the cups in a pan of hot water and bake 20 minutes. Turn out on a platter and pour about them a cream sauce.

Lox And Potato Casserole

8 medium potatoes
2 eggs
1 large onion, chopped
1/2 t. salt
1/2 pound lox
1/8 t. pepper
4 C. milk

Butter baking dish and line bottom with thinly sliced potatoes. Dot with onion and lox. Repeat layers until baking dish is 3/4 full. Beat together milk and eggs; add salt and pepper, and pour over potatoes. Add more milk if necessary to cover. Bake in slow oven (300°) for about 1-1/2 hours until browned. Serves 6 to 8.

Cheese Souffle

2 tablespoons butter
2 tablespoons flour
1 cup milk
2 eggs
1 cup cheese

Melt butter and add flour, stirring until it bubbles. Add the milk, gradually, and cook until the mixture is a smooth, creamy mass. Whip in the yolks, well beaten, then a cupful of finely grated cheese, a sprinkling of paprika, salt and pepper. Fold in the stiffly beaten whites of the eggs and fill buttered ramekins or casserole. Bake in moderate oven about 25 minutes. Finely minced lobster or crab meat can be used instead of the cheese if desired.

Cheese Pudding

Put 2 level cups dry grated cheese in a bowl, add 1 teaspoon flour,
1/2 teaspoon salt, 1/4 of pepper and beat in yolks of 2 eggs, 1 cup hot milk, 1 tablespoon butter, and 2 tablespoons of bread crumbs. Lastly add beaten whites of 2 eggs. Mix carefully and pour in greased baking dish. Bake about 20 minutes in moderate oven. Add 1/2 teaspoon baking powder to whites of eggs while beating. This will serve six persons.

Cheese Puff

Butter size of egg
2 tablespoons flour
1/2 pt. rich milk to be boiled with
pinch salt and cayenne pepper and
6 heaping tablespoons grated cheese

Take from fire, add 6 yolks eggs, beaten. Stir briskly. Now add six beaten whites. Stir lightly. Bake 30 minutes in moderate oven.

Cheese Souffle

3/4 cup grated cheese
3/4 cup bread crumbs
6 or 7 eggs
1 cup milk

Bake in buttered dish about 30 minutes. (A few slices of bacon may be placed around edges of casserole).

Cheese Fondue

1 cup scalded milk
1 cup soft stale bread crumbs
1/4 lb. mild cheese, cut in small pieces
1 tablespoon butter, 1/2 teaspoon salt
3 eggs, beaten separately

Mix first five ingredients, add yolks of eggs, beaten well. Fold in stiffly beaten whites. Pour into buttered baking dish. Bake 25 minutes in moderate oven.
