Spinach Ricotta Mold

1 pkg. frozen chopped spinach
1 c. water
1 envelope unflavored gelatine
1/4 c. lemon juice
1/2 c. water
1/3 c. mayonnaise
1/4 c. sugar
1 c. Ricotta cheese
3/4 tsp. salt
1/2 c. celery (chopped)

Cook spinach, drain thoroughly and cool. Heat the gelatine in water until dissolved. Add sugar, salt, remaining water and lemon juice to gelatine mixture. Stir gelatine mixture into mayonnaise. Chill until partially set. Beat the mixture. Add spinach, cheese and celery. Chill in 5 cup mold until firm.

Pineapple-Shrimp Mold

(Serves 8)

8 oz. pkg. lime Jello
1 1/2 c. pineapple chunks
2 c. boiling water
1/2 c. mayonnaise
2 c. cold water
1 T. grated onion
1 T. vinegar
1 or 2 cans shrimp (ringed and drained)
1 tsp. salt

Step 1: Dissolve Jello in boiling water. Add cold water, vinegar and salt. Step 2: To 1 1/2 c. gelatine mix add pineapple chunks. Pour into 2 quart salad mold; let set.
Step 3: To 1 c. gelatine mix, add mayonnaise, and onion. Stir well. Pour over set mixture of step 2. Chill.
Step 4: When set, pour over it the rest of the gelatine mix to which shrimp have been added.
Let set. Unmold on lettuce to serve.

1 pkg. raspberry or strawberry Jello
1/2 tsp. salt
1 1/2 T. vinegar
1 1/4 c. boiling water
1 can Hunt’s tomato sauce

Dissolve Jello in boiling water. Add remaining ingredients. Chill in (6x10) inch pan.

Potato Fried Cakes

Two medium sized potatoes, 2 eggs, 1 1/2 tablespoonfuls butter, 4 cups flour, 1 cup light brown or white sugar, 1 cup sour milk, 1 teaspoonful Royal baking powder, 1 teaspoonful soda, 1 teaspoonful salt, grated nutmeg to taste. Boil potatoes until done, mash, add butter and salt, whip until light; add sugar and eggs, beaten, mixed with sour milk. Add dry to wet, beating thoroughly. Roll out and fry in deep fat.

Sift well 5 tablespoonfuls yellow cornmeal, 4 tablespoonfuls flour, 2 tablespoonfuls sugar, 1/4 teaspoonful salt, 2 heaping teaspoonfuls Royal baking powder. Beat 2 eggs and add to the mixture, with enough milk to make a drop batter. Stir in quick 2 teaspoonfuls of melted butter. Beat well and drop in small spoonfuls into smoking hot fat. Serve with hot maple syrup.

One cup sweet milk, 1-3 cup sugar, 1 cup cornmeal, 1 cup flour, butter size of an egg (melt butter), 1 egg, 3 teaspoonfuls Royal baking powder, pinch salt.

Two potatoes, 1 cup sugar, 1 cup sour milk, 2 eggs, 1 tablespoonful butter or lard, 1 level teaspoonful soda, 2 level teaspoonfuls Royal baking powder, 1 level teaspoonful nutmeg. Boil and mash potatoes; while hot add lard and salt. When cold add eggs, sugar, sour milk, soda, nutmeg and baking powder in enough flour to make soft dough. Roll out, cut and fry in deep fat.
