It is a well known fact that carbonate of ammonia is used by bakers in the preparation of the finest and most wholesoine bread and cake, and has been from time immemorial. It ie among the oldest and at the same time most healthful constituents of baking powders. It is all evolved in gas by the heat of the oven, and leaves no trace of itself in the food, and it ia this that gives it its greatest valué as a leavening agent in the opinions of the physicians.
