líatner ingenious but not less fraudulent are the pretended tests of baking powder belng made in many of our kitchens by agents who are trying to further the sale of a Chicago arlicle. TheM 8o-called tests conslst in raixing separately, with water, a sample of tlie baklDg powder found in the house and of tbal carried by the agent. From tliat fouml in the house, if apure articlc, tlie bubbles wlll rise and buret on top like Ihose from a glass of champagne. The Chicago baking powder whlch they carry, wlien mixed with water, wlll show an extra froth upon the top of the mixture wuich is claimed as evidence of superiority. On the contrary, however, it is not oníy the exhibilion of a trick, but is absolute proof that the baking powder which so acts is adulterated. The chemists have ascertaincd that the adulterant used is a chentical added for the expre3s purpose of produeing tliis action and decelving bousekeepers as to the true value of the baking powder. Tuis is not only a dishonest trick, but a dhty one, for the Chemical is the product ot the lllthy refuse of the slaughter house, and ifthia baking powder is used in the preparation of food, passes tato the bisuuit or cake without chauge. Of course any statements made In reference to other baking powdere, by parties canjiht in practising such tricks as these tor the purpose of decelving the public, will be entitled to no credit. . It is probably wisest in the interest of our families, and to prevent onr lood from being contaminated by tramps of 1 his kind, to turn :tll persons who wish or attempt to tamper wlth it uncereinoniously from the door, and to use those articles only which experience has proved satisfactory, or the official tests have established as pure and wholesome.
