Having learnod this method of cooking beet within a fowjcars, we find it ao mach the best yay that no week ehipes without a meaí of bueí steamingou our table. To Btearn beef procuro a cast iron pot, of largo dimeosions, having at the bottom ashoulder which is lbund in most large iron pote, at the point wherc the diameter is di:ninished to fit tbcholü in thostove. Acrossthis hole yon place some pieces of shingle ; then fil! up the pot to tbe shingles with water adding a few piecos of lemon peel or n little maco if you please; place the' meat upon theshingles; cofer up tfght wilh a fitted tin cover; place over a hot firo and wait lili dono-, You must be careiul to adel water occasionally ; for if it should all boil away, of oourse the gravy would be burned, and the flávor of the mout injnred. Whon finished the bottom of the pot containa a large quantity of most excellent gravy, which, of course, must be thiokened nud seasoned. A rump oi beef, or a shoulder, forms an excellent piece to opérate on.
