The exct'Bsive use of cold water dur ing the Bweltering heat of summer, ofteD resulta in serious and alarraing iliness It is, therefore, advisable that some bev erage sliould be substituted for it, o which tboee oppreesed can partake with safety. For this purposo I am awaro of no bctter or more refreshing drink than the following : Take of the best white Jamaica ginger root, carefulljfc bruised, two ounces ; cream of tartar, one ounce ; water, six quarts ; to be boilcd aboutfive minutes, then strained; to the straioed liquor add one pound of jugar, and again place it over the fire; keep it well st'rred till the sugar is per(ectly dissolvcd, and thpn pour it into an earthen vefsel, into which you have previously put two drachms of tartaric icid, and the rind of one lemon, and let itremain till the heat is reduced to a lukewarm temperature ; then add a tablespooDful of yea?t, etirriog them well together, and bottle for uso. The corks must be we!l eecured. The drink will be in high perfection in four or five days. This is a very relreshing and wholesome beverage, and one which may be largely partaken of without any un)le&saot reeults even iu the hottest weather.-
