Ice-water should be dra&k büt spariug]y. A most excellent substituto for it is pounded ice taken in sinall luuips into the mouth and allowed to dissolve upon the tonguo. This will prove vory refreshing and much moro enduring in its offects. Lemonado is a simple and grateful beverage. To mako it : Roll tho leinons on somethiug hard until thuy bocorae soft ; grate off tho rinda, cut the lemons in slices and squoo.o thom in a pitcher (a new clothes-pin will answer for a squeczer in lieu of somothing bottor ) ; pour on the required quantity of water, and swecten accordiii to taste. Tho grated rinds, for the sake of their aroma, should be added too. Aftrr mixing thoronghly, set the pitcher asido for half an hour ; then strain the liquor through a jelly strainer, and put inthe ice. Travelers who find it inconvonient to uso lemons can carry a box of lomon sugar, propared froni citric acid and 6ugar, a little of which, in a glass of ice-water will furnish quite a rofreshing drink, and one that will help oftentimes to avert a siok-headache and billiousnefis. Citric aoid is obtained from the juice of leiuons and limes. Perry is a delicious beverage made from cherries, and will keep a year or more. Take six pounds of cherries and bruise them ; pour on a pint and a half of hot water, and boil for fifteen minutes. Thon struin i irough a flannel bug, and add three pouuds of Bugar. Boil for half an hour more, or until tho liquid will sink to the bottom of a nap oL water (try it with a teaapoonful of the liquid) ; then iurn into jeïly cnps, aud cover with paper dipped in the white of an ogg. To preparo tho drink : Put a spoonful of tho jolly into a goblot of water, and let it stand about ten minutes ; then stir it up and fill with pounded ice. Currants and raspbemes made into "shrub" furnish a pleasant and eooling drink when mixed with ico water. Pounded ico is also an agreeable addition to a saucer of strawberrios, raspberries or currants. Pound it until it is almostasfine assnow, and spread it over tho berrios. With any fruit it is an excellent substituto for crenm. Water ices are nlways acceptable. Those made of leinon, orange, curriyits, strawberries, and pineapple, are much improved Vy adding tlie stiff beaten whites of four eggs to every two quarts of tho liquid. Put it in just as it is tumed into the freezer. and it will freeze in a foam.
