Indinn Rvsk. - Two ligtit cups of Inilinn niHul, unu cup üt' wbitu ilour, one teuspuoiitul of saleratus, enougQ suur or tiuttermilk to dissolve one cup sweot ; stir in 3-4 of a cup of molasses. Pnor Mans Cake. - Oue cup of susar, one cup of tablespoouful of lutter, one teaspoouful of dry cream of taitar, one half a teaspoouful of soda dissolved in Diilk, oue egg, a little ciniiainon, and fluur to maku it as stift' as pouml cake. Oinger Cake - One and one half pnunds of fljur, tbree-t'ourtbs of butter, one pint of uiolassös, five tablespoonfuis of ginger ; rub the butter and sugar together ; tbcn roll theru out very tbin and cut, tbi'in into rouuds, place theiu on tiu sheets and bake tbem well, and they will keep good a yenr. Chocolate Cakes. - One pound of sugar one pouud of butter, eight eggs, two tablespoonfuls of brandy, a pinch ot 8alt, chocolate glazing. Mix the above ingrediënt well toether with a wooden spoon, putting the butter (melted beforu the fir'_') in latt. Spread a baking sheet witb butter, put over it the mixture half an inch tbick and bake it. Cul the cake iuto oblong pieces, and glaze them thickly with chocolate.
