Put six whole eggs into au earthen pan with half a pound of Bugar, upon which you have previously rubbed the rind of the lemon ; stand the pan in rery hot water, keeping it content well mixed until becoming rather warm, wben take it from ;be water, continuing to whisk until qaite cool and thickish ; stir in gently inlf a pound of sifted flour ; have ready Duttered, and dusted with sugar, about a dozen small sponge cake tins, put a lablfispoonful of the mixture into each, shake sugar over, and bake theui in a moderate oven.
