The market-placc of Milan exhibits somc interesting features, especially in tho preparation of l'rogs for sale. They are brought from tho froggeries alive, in baskets, from which small lots aro taken into the apron of the saleswoman and kept covered to prevent escape. The frog is held with the left hand, its noae sheared off, the edge of the skin seized and, with a single ïnovoment, stripped off to the ends of tho toes, (he true üiwardness removed, and the squirming dainty is thiown into a dish ready for uso. Thoy are thus dispatehed at the rato of ten per minute by an experionced frogRtrr. When a customer appioaches the maso is stirred np to show tliat all aro yet fresh, alive and kicking, and tho ambition of tho purchaser isto get thnxn into the stewpau before their legs forgct their cunning.
