Macaeoons. - One and one quarter pounds powdered silgar, onc pound sweet almonds bleached and pounded to a paste, whites six eggs, grated peel of two lemons. Frequently, after having taken inusual pains in collecting flower-seeds, thé amateur florist flnds them destroyed by mice. By placing bits of camphor-guin with the seeds they may be preserved, as mice dislike the odor, and wil] nút disturb books, clothing, or, indeed, any thing which may be impregnated with this substance. To Colok BlanoMange. - The druggists sell two kinds of colored isinglass - a bright carmine and a pnrnle or grape color. After making the white gelatine, use the colored by carei'nlly adding tlic (uuintity of éitlier puTple or carmine to produce the desired tint. For a yellow tint, the yolk of a raw egg, added to the quantity of the preparad blanc-mange, with the white in ! -itine (added to'milk); for brown, cliocolate is added to the same; for green, green spinach juice, obtained by bruising up the green leaves after cooking veiy slightly and straining. Kotiie Gkutzen.- "Oolored blancmange" is the dish known as "rotlie grutzen." Tlie milk never eurdlea, Lor none is needed. Boil tlie fruit in a little water, strain it through a jelly bag; sweeten to taste, and uso the juice instead of milk; make it precisely as yon would plain blanc-mange; no eggs or ñavoring, and increasing very slightly the proportion of corn-starch. Any of the darker colored fruits may be used, currants, red cherries, raspberries, blackberries, blaek currants, whortleberries, or grapes. The rothe grutzen will be lighter or darkor, as more or less water is used, aceording to the color of the fruit. To Cure Bunions.- Bind on the pulp of a lemon every night. Snow Pudding. - Soak one ounce of gelantine in one pint of cold water for ten minutes; place the sanie the flre : stir and remove as soon as dissolved, and wlien nearly cold beat to a stiiï froth witli an egg-beater ; beat the whites of tliree eggs to a stift froth and add to the gelatine froth, together with the juice of three lemons and pulverized sugar to suit the taste, and mix the whole well together; next pour into moulds to cool ; serve with a soft custard made of the yolks of the eggs. Frknch Loaf-Cake. - Two and a half cups sugar, one and a half cups butter, one cup raisins, one cup warm milk, flve cups sifted flour, three eggs, halt wineglass wme, a httle nutmeg, a small teaspoonful of saleratus. Mix butter and sugar to a cream, add part of flour and yolks of eggs, then other part of llour and whites of eggs. To Clean Smokt Marble. - Brush a paste of chloride of lime and water ever the entire surface; grease spots can be removed from njarble by applying a paste of erude potash and whiting in this manner. Caramel Cbeam.- Have on the flre in a pan one pound ot maple sugar ; let it boil two or three times, sufflcient to brown but not burn it. Beat six eggs and one pound of white sugar very light ; stir this inte two quarts of boiíingniilk; and stir constantly until it comes to a boil ; then pour in the boiling sugar, and mix thoroughly. When perfectly cold, add one quart of cream, sweetened with a cupful of white sugar. Put it in a freezer and freeze the same as ice-cream.
