It isn’t often that you find rose, saffron, dates, and flecks of delicate pistachio brittle in a dark chocolate bar, but if you’re looking at chocolate culture through an Arabic lens that changes everything. The key to understanding how exotic ingredients work together to produce flavor requires conscious consideration of what happens when we experience complementary and contrasting flavors that are considered novel or exotic in our own culture.

Understanding facts that define ingredient lore are particularly important. Why is saffron, a rare and expensive spice, so beloved? How can the lingering scent of a rose in the context of a garden be just as sensual in the finish of a luxury chocolate bar? Why are date palms referred to as “trees of life” in Emirati culture? These and other questions will be explored at this Taste and Tell, where we’ll smell and taste the parts that make up the whole of a Mirzam Halwa Dark Chocolate Bar before partaking in delectation of the confection.

Taste & Tell is a delectable series of programming led by flavor and fragrance expert Michelle Krell Kydd, who blogs at Glass Petal Smoke and conducts Smell & Tell programming. Taste & Tell events take place at AADL as well as local eating and drinking establishments. Edutainment never tasted so good.
