The íamous Leipaic physician, Prof3SSO1" Reclarn, in a late number of the Gesundheit, has ventured lo say a good word on behalf of newly baked bread. The majority of thoold people, dyspeptics and hypochondriacs, he observes, say that they can only eat stale bread; they find new bread too indigestible. The virtue. he tells theru, is not in the ataleness of the bread; but in the care and thoroughnesa with which they are compelled to raasticate it, on account of its bardness. The tongue not only deceives the human race in spcaking, says the learned physician ; it is a great deceiver in eating. As soon as the tongue perceives that auy rnorsel in our mouth is soft and yielding, we are perauaded that it may safely be swallowed. No time or labor Is spent upon its mastication. Heneo so many people declare that sauerkraut soft cakes, pate defoie gras, eel and other favorable icacies of the Teutón, do uot agree with tbem. Tüe professor declares, that none of these are actually indigestible in themselves. As withnew bread, it is the care with which they are swallowed which make3 them indigestible. Stale bread and hard biscuit. on the other hand, are not of themselvps inhcrently so very digestible ; but they gíve the eater so much trouble to soften them, that they are not swallowed until they have been reduced into a fit condltion for that process. Henee the stomach has not that trouble with them wLlch it almost invariably has with the sof ter and moro delicate food which has never received more than two or three tunri with tbc teeth.
