I must tellyou the old story of how the late Charlea Delmonico used to talk about the new hot water cure. He said the Delmonicos were the hrst to recommend it to guests who complained of having no appetite. "Take a cup of hot water and lemon and y ou will feel beteer," was the formula adopted; and the cup of hot water and lemon was simply a little hot water with a drop of lemon juice in it to take away the in3ipidity. For thia antibilious remedy, thecatnrerscharged the price oï tlieir best liquors- twenty-tive cents or more- and it certainly was a wiser way to spend small change than for alcohol. "Few people know bow to cook water," Charles used to afin-m. "The secret is in putting good, fresh water int o a clean kettle, already quite warm. and settitm the water to boilinsi quickly, and then takins it riaht ofï for use in tea, coffee, or other drinks, before it is spoiled. To let it steam and simmer and evapórate uniil the good water is in the atmosphero, and the lime and iron nnd dregs oniy lelt in the kettle- bah! that is what makes a great many peonle sick, and is worse than no water at all." Every lady who readá this valuable recipe of a great and careful cook. should naver forget how to cook water
