A line i drawn on the board just outsido of the lte which is then removed, and a bolo eu: through the board jast the size of the keg The board is then nailed upon the top cf thi plank, one foot from tho upright, tho ke set into lt, and a spout fltted to project ovei tho side. A lever of tough hard wood, witl a three-quarter incli hole, is fitted looscli ïuto the slot in the top of the upright, an secured by u bolt, as shown in the engrav in. To work the presa, the keg is fllled witl "cracklings" and the heads, which hav been trlmmed down around the edges, au placed upon thcm, so that the grain f oot head shall lic crosswiso of tho othcr. A follower, which may bo sawcd from an] stick of the right thickness, is then set up right under the lever, and the pressure ap plicd. Tho lard is discharged from th spout and received in a dishset for thr pur pose. The press may be set upon tresties or provided with legs. In tho latter il would be neecssary to put au extra leg di. rectly beneath the cask to support Uu pressuro when the press is in operation.
