Among those vegetables containing the largest percent of starch may be mentioned potatoes, beans, corn, peas, carrots, beets, turnips and parsnips. The pungent vegetable foods, as leeks, onions, garlics, horseradish, etc., increase saliva and gastric juices, acting somewhat on the kidneys.
