The long desired and much needec Fruit Evaporator, Jelly and Canning Faotory has at last become a fixed fact. The energetic and enterprising firm of Allmendinger & Sohneider have had the works in running order for ocly a mont, hand are doing a lively business both for themstlves and their patrón?. The evaporating capaeity of the Charlotte Evaporator per day is 140 busheb of apples, or 75 bushels of peaohes; the boiler cf 50 horse power is of sufficient capaeity to run a secoad evaporator if the business reqiires it. The engine has a capaeity of trnnding and pressing 1000 bushels of apples per day. Tne hydraulic press of 80 tons pressure wül extract the juice of 40 bushels of apples in ten minutes, and another press of the same capaeity can be run by the same engine if required. The j.'lly department is now doing a large business, and can manufaetuie 120 gallons of apple jelly per day, and is also producing an excellent article of grape and pear jelly. An apple butter machine is used, which will work up 50 busheli of apples a day. A large generator for manufacturing eider into vinegar in one week will be operated, the product to be a perfectly pure article. The canning department will be in operatian next season, and large quacfities ot tomatoe, corn, peas, fquash,etc., will find a ready sale at the factory. This is an enterprise that all of our citizens will appreciate as it will be of great benefit to a krge number of producers and our business men generally. The works so far have cost $ö000, the 8greement with the Pomológica! Soaiety has been carried out, and the committee now earnestly desires that those who have so generously subscribid to the bonus Eund will be ready to pay their subscriptions when our authorized asrent, Martin Clark, sball soon cal! upon them.
