Elizabeth demonstrates how to make another simple and healthy weeknight dinner: this time, vegetarian enchiladas!

Easy Vegetarian Enchiladas (serves 6-8, or 4 with leftovers!)
Total time: about 45 minutes
Ingredients
For the enchiladas:
10 large burrito tortillas
3 cans black beans, rinsed
1 ½ pounds white mushrooms, sliced
3 jalapeno peppers, seeded and chopped
1 large white onion, diced
2 jars salsa verde/tomatillo salsa
2 bags shredded cheese, such as cheddar or Mexican blend
cumin, chili powder, red pepper flakes, salt, pepper, to taste
butter or oil to grease baking pans
olive oil
Optional toppings:
Cilantro
Sour cream
Tomatoes
Green onions
Avocado
Directions
- Preheat the oven to 375 and grease two 9 x 13 inch baking pans
- Dice the onion and put it in a large pan with some olive oil and sautee until it starts to soften and become translucent
- Wash and slice the mushrooms and add them into the pan with the onions and let them cook down until most of the juices have cooked away
- Seed and dice the jalapeno and rinse the black beans. Add both into the pan with the mushrooms and onions once the juices have evaporated. Season with cumin, chili power, red pepper flakes, salt and pepper to taste. Mix everything together and let the mixture get warmed through.
- Place a tortilla on a large plate and place several scoops of the bean mixture in it in a line. Roll the tortilla up and tuck it into the baking pan. Repeat until all the mixture is used up (you should have 8-10 enchiladas).
- Pour the salsa verde over the enchiladas in each pan, making sure that there is a layer of salsa on the bottom of the pan. Sprinkle the cheese on top.
- Bake the enchiladas for 20-30 minutes until the cheese is melted and the edges of the tortillas are a little crispy.
- Top with whatever toppings you like and enjoy!
