After the first great restaurants began to draw tourists to Paris in the early 1800s, numerous other public eateries arose including cafés, wine shops, workers’ restaurants, women’s restaurants, bouillons, crèmeries, brasseries, treehouse restaurants, and bistros. This talk presents an overview of these options, and their development and influence going into the 1900s.
Jim Chevallier is a Los Angeles-based historian of French food and wrote, most recently, the book Feasting with the Franks: The First French Medieval Food (2021).
