The eider is made in the usunl tnanner by tnashing the apples to a pumas. The pumas is then put in a box, and a strong pressure is put on to squeeze out the eider which is conducted to a cistern to remain until the proper time for distillation. This is known first by the fomentation of the eider, which causes the extraneous matter in the eider to raise and float on top. This scum remains a few days until the fomentation ceases and then sinks to the bottom of the eider. Aboutthis time alcohol forms and has to be "run off" before vinegar forms. The manufacturer prepares a copDer boiler set over an arch that can je heated by wood fire. The eider s then boiled and the steam escapes "rom the copper boiler into a cooler ; "rom the cooler the steam is conducid into a condenser, which condenser ia generally madeby copper pipes aid in cold water, held by a wooden trough, tocoolthe steam that escapes rom the copper boiler.
