Stephatho (Greek Stew)

2 lbs. beef (or rabbit) stew meat, 1 inch cubes
1/4 c. olive oil
24 small boiled onions
3 cloves garlic, peeled
1/2 T. salt
1/4 tsp. pepper
1/4 tsp. cinnamon
1 tsp. pickling spice
3 bay leaves
1 pt. red wine
1/4 c. vinegar
Brown meat thoroughly. Add remaining ingredients to meat and bake uncovered in an oven-proof casserole at 300° for 2 and 1/2 hours. Serve with rice and a tossed salad.
