As the time 8 at hand for enjoying this favorito sauce, the foUowing is a very good receipt for preparing it for future table use. To a half bushei ekinned tomatoes, add one quart of good vinegar, one pound of ealt, a quarter of pound oi black pepper, two ounces of Áfricas enyenne, a quartcr of a pound of allspice, eix good oniona, one ounce of cïoves, and two pouuds of brown sugar. Boil this mass for three hours, constanllv stiringit to keep it from bnrning. When cool, struin it through a fineseive or eoarse clotb nnd bottle it for use. Many persons omit the vinegar in this proparation.
