The appsjatuB naoessary tor cusnuing peppermint are a boiler to wake steam; a wooden tub to receive planta trom which the oil is to be extracted, which is usually four or five feet in diameter and abont the same height, with cover fitting tight; and a tub for cold water aboutthe same size as the disiilling tub but without cover. A tin pipe or worm abóut two inches in diameier and LOO or more feet in length, is made to go mside the watertubs, extending trom the top downwardto the bottoni of the tub wherc it makes a turn at right angles with the side of the tub and passes through it, the joint being made water-tight. Ihe upper end of the worm is connected with the upper portion of the distil mgtub by a tin pipe. To distffl, the plantreceivino- tub is tilledwithfresh-cut peppermint, a wagon load or more, the cover fitted on tightly, conneetion made with the boiler; the steam from the boiler enters at the bottom; the wash-tub is filled with water. When steam is let into the plant tub the oil in the plante is vaporized and passes over into the condenser, whence it issues at the bottom as peppermint oil. More or less water passes over but as the specific o-ravity is greater than that of the oil, ft seeks the lower part of the vessel. Considerable skill and judgment are required in tlie management. A still of fair capacity costs about L200.
